let’s cook!

This must have been from over a year ago. But I never really got the chance to really try it. Maybe on some odd weekend. Since the dried chilies might be hard to find, a pack or two of kaldereta mix would do I guess. I don’t really know.
Hypothetical Beef/Lamb Kaldereta/Adobado Recipe
Bell peppers
Green peas
Dried chilies (poblano, habanero)
Jalapeno Basil
Black and white pepper
Red wine
Olive oil
Parmesan cheese and cream
1. Saute garlic and onion in olive oil. Add meat, sear until slightly browned. Season with paprika and cinnamon and cloves. Salt and pepper.
2. Rehydrate dried chilies, remove seeds. Mix chilies, jalapenos, tomatoes, basil in blender with a little water until almost smooth. Set aside.
3. Add water to meat mixture, simmer until tender, about one hour. Add chili mixture and red wine, simmer for another 30 minutes until alcohol is reduced.
4. In a separate pan, sear potatoes and carrots until slightly cooked. Add all vegetables into the pot with the meat, simmer for another 15 minutes. Add salt and pepper to taste.
5. Serve with Parmesan cheese and cream on the side.
